Adding "Email To" details in Contact Log Record

We have a client that has several email address fields in Contacts (e.g. Personal Email, Work Email).
When we look at the Contact Log, we can see the email details (i.e. the content), BUT we don't see the email address that the message was sent to.
Would it be possible to have "Email To" added to that log template (or available as a list option in the log for Messages)?

While I don't have multiple emails for users currently, I actually see a good use case for this.  Even just seeing the record showing it went to the specific email is helpful for record purposes.

From a litigation archival purpose - the more data the better usually...something most may never have to deal with, but is a concern to consider of why this detail can be critical.
