The new Simple Mail editor, released today, does have background "copy to html" functionality built in.
There is not a way to automate the "copy to html" feature this at this time.
It would be nice if there was a global setting for this in administration, or have it always click, with the exception of it needing to be unclicked.

Yes! Given that copying to plain text is a best practice for ensuring deliverability of emails, defaulting to a copy of the final version of the html email would be super!
And "final version" in Erin's comment is the key to this request.
ONTRAmail will save a plain text version on the first save of the email message, but then never updates it. This means that people who practice good authoring techniques like "save often" but forget to click "Settings" and use the "Copy from HTML" button when they are finished editing the email will end up with different HTML and plain text versions. That can lead to less inbox delivery, depending on the email service. The problem with ONTRAmail is that you probably set the subject line and other Settings on the first save, when we prompt you, and don't revisit on subsequent saves.
This would be great both in Ontramail but also the 'EMAIL' (i.e. not fancy) editor.
