Is there a way to change the default template to one that I created?

Yes, you can create a custom invoice template in Administration > Email > Double Opt In / Invoice Manager:

Also, we will soon be adding the ability for you to copy the default invoice and use it to create your new version if you like. This should make it easier if you just want minor changes from the default invoice.
