Adding a SMS Sent trigger is a good idea!
While this is being considered, you can use Webhooks to send data to Zapier using the Zapier Webhook action. You could build out a Campaign that sends an SMS, then sends a Webhook to Zapier with the contact information, SMS text, etc. There is also a Trigger or Goal for received SMS from a Contact (first in this image).
