That's actually not the problem. The problem is that you're filling out the form 'on behalf of' the contact, which then tracks your employee as the contact, which is what logs the visit in the contact's record.
To avoid this, check the box in those form settings under 'Advanced' called 'Prevent tracking on form submissions' which will make it so we don't consider the person filling out the form to be the contact it's filled out for....

I have a dynamic page setup that is used by internal staff for updating records, note keeping etc.
The problem I have is that whenever any of the team visits a contact's dynamic record, this shows up in the Contact Log for that contact.
I'd like the ability to exclude certain actions (eg. landing page visit, form fillouts etc) from this if possible

Awesome thanks Landon, I checked and only had some form submission buttons doing this so all are now. Is there a way to not track landing page visits in the Contact Log, or to show the title of the landing page more easily?
Why would you not want to track visits in the contact log? That's a key part of the value. The issue is when you're tracking the wrong people visiting, which is solved with the suggestion above.
