Use the condition "Contact still exists" in your metrics to remove any sales for your deleted test contact.

When you test using the test gateway, the orders screw up your live stats. As long as you can test with a test user, you can delete that user and remove the actual orders, but they still show up in the dashboard stats skewing your financial reporting for all time. They also mess up the conversion stats of the order form you test on. In my opinion, test orders should either not show up in stats, or if they do, should be removed from stats when they are deleted.
