You should be able to set the notification to go out "XX days before Task is due" when creating regular tasks.

Schedule Date for Task Notification Email to Be Sent
It would be so helpful if we could schedule when a task notification is to be sent. I regularly set tasks for a month out, and it's frustrating when it pops up in my email box immediately - that doesn't help to trigger the action desired at the time it's needed!

True, but it would also be nice to have that available with Quick Tasks as well.
